Versatile chef's knife for everyday cooking
Hideyoshi is a classic Santoku with an 18 cm blade, making it a versatile knife for everyday kitchen work. The wide blade is particularly well-suited for slicing and chopping vegetables, herbs, fish, and meat.
With its balanced shape, the Santoku combines sufficient blade length for larger ingredients with good control for finer cutting tasks. The double-beveled edge makes the knife easy to handle.
69 layers of Damascus steel with a VG10 core
The blade consists of 69 layers of Damascus steel with a core made of VG10 steel. This multi-layered construction creates the characteristic, finely waved pattern on the blade's surface.
The hard VG10 core forms the actual cutting edge, while the surrounding steel layers complement the structure. This results in a Japanese chef's knife with a precise edge and a distinctive look defined by the Damascus steel.
The black laminated wood handle continues the knife's sleek design and sits comfortably in the hand.
Hideyoshi, Nobunaga, and Ranmaru
The name Hideyoshi commemorates Toyotomi Hideyoshi, who initially served Oda Nobunaga and later became one of the most significant figures in Japanese history.
Together with Nobunaga, our 20 cm Gyuto, and Ranmaru, our compact 13 cm petty knife, Hideyoshi is part of our three-piece series of Japanese Damascus knives.
