Versatile chef's knife for everyday cooking
Hideyoshi is a classic Santoku with an 18 cm blade, making it a versatile knife for daily kitchen tasks. The wide blade is particularly well-suited for slicing and chopping vegetables, herbs, fish, and meat.
With its balanced shape, the Santoku combines sufficient blade length for larger ingredients with good control for finer cutting tasks. The double-edged grind makes the knife easy to handle.
69-layer Damascus steel with VG10 core
The blade is made of 69 layers of Damascus steel with a core of VG10 steel. The multi-layered construction creates the characteristic, finely wavy pattern on the blade surface.
The hard VG10 core forms the actual cutting layer, while the surrounding steel layers complement the construction. This results in a Japanese chef's knife with a precise edge and a distinctive appearance characterized by the Damascus steel.
The black laminated wood handle continues the knife's clear design and feels comfortable in the hand.
Hideyoshi, Nobunaga and Ranmaru
The name Hideyoshi commemorates Toyotomi Hideyoshi, who initially served Oda Nobunaga and later became one of the most important figures in Japanese history.
Hideyoshi, along with Nobunaga, our 20 cm Gyuto, and Ranmaru, the compact 13 cm Petty, belongs to our three-part series of Japanese Damascus knives.
